MEDITER­RANEAN PIZ­ZAS

MAKES 4 PREP 30 MINS COOK 30 MINS PER SERVE 3582kj

✦ 2 tbsp olive oil

✦ 1 onion, finely chopped

✦ 500g beef mince

✦ 2 tbsp tomato paste

✦ 400g can diced toma­toes

✦ 2 tbsp pine nuts, toasted

✦ ½ cup chopped mint, plus ex­tra to serve

✦ 1 tbsp bal­samic vine­gar

✦ 1 tsp honey

✦ ½ tsp ground cin­na­mon

✦ ½ tsp ground cumin

✦ 2 large store-bought pizza bases

✦ 1 cup shred­ded tasty cheese

✦ Greek-style nat­u­ral yo­ghurt, to serve

1 In a large fry­ing pan, heat oil on medium. Cook onion 4-5 mins un­til soft­ened. In­crease heat to high. Add mince and brown, break­ing up lumps, 6-8 mins.

2 Add tomato paste. Cook 1 min. Mix in toma­toes. Sim­mer 4-5 mins un­til thick­ened. Re­move from heat. Stir pine nuts, mint, vine­gar, honey and spices through.

3 Pre­heat oven to 200°C. Lightly grease and line 2 oven trays with bak­ing pa­per. Place pizza bases on trays.

4 Spread beef mix­ture over bases. Sprin­kle with cheese. Bake 10-12 mins un­til bases are crisp and golden and cheese has melted. Serve topped with dol­lops of yo­ghurt and scat­tered with ex­tra mint leaves. TIP You can omit the pine nuts, if you like.
