MEDITERRAN­EAN PIZZAS

MAKES 4 PREP 30 MINS COOK 30 MINS PER SERVE 3582kj

✦ 2 tbsp olive oil

✦ 1 onion, finely chopped

✦ 500g beef mince

✦ 2 tbsp tomato paste

✦ 400g can diced tomatoes

✦ 2 tbsp pine nuts, toasted

✦ ½ cup chopped mint, plus extra to serve

✦ 1 tbsp balsamic vinegar

✦ 1 tsp honey

✦ ½ tsp ground cinnamon

✦ ½ tsp ground cumin

✦ 2 large store-bought pizza bases

✦ 1 cup shredded tasty cheese

✦ Greek-style natural yoghurt, to serve

1 In a large frying pan, heat oil on medium. Cook onion 4-5 mins until softened. Increase heat to high. Add mince and brown, breaking up lumps, 6-8 mins.

2 Add tomato paste. Cook 1 min. Mix in tomatoes. Simmer 4-5 mins until thickened. Remove from heat. Stir pine nuts, mint, vinegar, honey and spices through.

3 Preheat oven to 200°C. Lightly grease and line 2 oven trays with baking paper. Place pizza bases on trays.

4 Spread beef mixture over bases. Sprinkle with cheese. Bake 10-12 mins until bases are crisp and golden and cheese has melted. Serve topped with dollops of yoghurt and scattered with extra mint leaves. TIP You can omit the pine nuts, if you like.
