What’s your favourite meal to whip up when time is tight?

Pasta or a salad if I’ve got limited cooking time (under 15 minutes). If I haven’t got much time to prep but loads of time to cook, I’ll let the oven do the work with a tray bake, casserole or slow-roasted shoulder of lamb or pork.

What are your pantry essentials for easy weeknight cooking?

Cans of various beans, tomatoes, dried pasta and noodles, nuts and seeds. Plus, lots of internatio­nal flavour bombs for creating simple dishes from around the world – garlic, onions, ginger, spices, sriracha, hoisin sauce, fish sauces, good anchovies, salted capers, sherry vinegar, Japanese mayo and miso. Just add veg!

What kitchen gadget couldn’t you live without?

Microplane for zesting citrus and grating parmesan.

What would we always find in your fridge?

Cucumber, lemons, limes, fetta, Greek yoghurt, iceberg lettuce, parmesan, tonic water, eggs, butter, my wife’s wine, bacon, too many condiments, chicken, chutneys and jam, milk and loads of other vegetables.

How would you describebe your home kitchen?

A warm, relaxed place for r conversati­on, friendship and good food.
