CORN & PRAWN FRITTERS WITH ASIAN SALAD

½ cup self-raising flour 2 eggs, lightly beaten 500g garlic-marinated peeled green prawns, finely chopped 2 corn cobs, husks, silks, kernels removed 2 green onions, thinly sliced ½ cup roughly chopped coriander, plus extra sprigs to serve ½ cup vegetable oil slaw, sweet chilli sauce, lime wedges, to serve

1 In a medium bowl, whisk flour and egg together until smooth. Add prawns, corn, onion and coriander, stirring well. Season.

2 In a large frying pan, heat oil on medium. Cook tablespoon­s of mixture, in 3-4 batches, 2-3 mins each batch, turning, until golden and cooked through. Drain on paper towel.

3 Sprinkle slaw with extra coriander and drizzle with sweet chilli sauce. Serve fritters with slaw and lime wedges.
