FOIL-WRAPPED FISH WITH TOMATO, ONION & CAPERS

SERVES 4 PREP + COOK 25 MINS

✦ 4 x 200g firm white fish fillets ✦ 2 tomatoes, sliced ✦ 1 small red onion, sliced thinly ✦ 2 cloves garlic, sliced thinly ✦ 2 tbsp drained baby capers ✦ 4 sprigs fresh thyme ✦ 2 medium lemons, halved ✦ 2 tbsp extra-virgin olive oil

1 Place each fish fillet on 20cm square of foil layered with 20cm baking paper. Divide tomato, onion, garlic, capers and thyme among fish pieces. Squeeze juice from lemon over each. Drizzle with oil. Season.

2 Gather corners of foil together above fish. Twist to enclose securely.

3 Cook fish parcels on flat plate or in glowing coals for 15 mins or until just cooked through. Stand fish for 5 mins before serving.
