MANGO MAGIC MANGO KULFI

Add this fresh, fruity taste to your sweet and savoury dishes this week! SERVES 8 PREP 15 MINS + FREEZING

✦ ¹⁄ 3 cup hot milk ✦ 3 strands saffron ✦ 2 cups mango puree (see tip) ✦ 395g can sweetened condensed milk ✦ 1½ cups thickened cream ✦ ½ cup icing sugar ✦ chopped pistachios, to serve 1 In a small jug, combine milk and saffron. Set aside 5 mins.

2 In a medium bowl, combine saffron milk, mango puree and condensed milk.

3 In a large bowl, using an electric mixer, beat the cream and icing sugar together until soft peaks form. Fold cream through mango mixture.

4 Divide mango mixture between 8 x ½-cup serving glasses. Freeze 3 hours or until set.

5 Remove from freezer 5 mins before serving. Sprinkle with chopped pistachios, to serve.
