COCONUT, LIME & MANGO ICE-CREAM

MAKES 6 CUPS PREP 20 MINS + CHURNING + FREEZING COOK 5 MINS

✦ 2 x 400g cans coconut milk ✦ ½ cup caster sugar ✦ 1 lime, zest finely grated, plus 1 tbsp juice ✦ 2 tbsp caster sugar ✦ 2 tbsp water ✦ 1 tbsp liquid glucose syrup ✦ 2 mangoes, chopped

1 In a large bowl, using an electric mixer, beat coconut milk and sugar together until sugar dissolves. Beat in zest.

2 Pour into the chilled bowl of an ice-cream machine and churn following manufactur­er’s instructio­ns (about 40 mins).

3 In a small saucepan, combine sugar and water. Stir over low heat until sugar dissolves. Simmer 2 mins. Remove from heat. Stir in glucose and lime juice.

4 In a blender, combine syrup with mango. Process until pureed. Partially fold through ice-cream. Pour into a 6-cup freezer container. Freeze 4 hours or until firm. Serve in scoops.
