CREAMY SPINACH DIP

SERVES 4 PREP + COOK 5 MINS ✦ 120g baby spinach ✦ ¹⁄ 3 cup Greek-style natural yoghurt ✦ 1 tsp finely grated lemon zest ✦ 1 tbsp finely chopped chives ✦ 1 tbsp lemon juice ✦ 1 bunch baby red radishes

1 In a saucepan of boiling salted water, blanch spinach 20 secs until just wilted. Drain. Refresh under cold water. Squeeze out excess water, then finely chop.

2 Transfer spinach to a bowl. Stir in yoghurt, zest, chives and juice. Season to taste.

3 Wash radishes under cold water and trim tops. Using a small, sharp knife, cut into quarters.

4 Serve dip accompanie­d with radish.
