LOBSTER WITH LIME & HERBS

SERVES 6 PREP 15 MINS + REFRIGERAT­ION COOK 5 MINS

6 uncooked medium lobster tails

¹⁄3 cup olive oil

2 tsp finely grated lime zest

½ cup lime juice

2 cloves garlic, crushed

2 tbsp each coarsely chopped coriander and flatleaf parsley, plus extra to serve

6 limes, cut into cheeks

1 Remove and discard the soft shell from underneath lobster tails to expose the flesh.

2 Combine oil, zest, juice, garlic and herbs in a large bowl. Add lobster. Cover and refrigerat­e 1 hour.

3 Drain lobster. Reserve the marinade.

4 Cook lobster on a heated oiled barbecue 5 mins until browned all over and just cooked through, brushing occasional­ly with reserved marinade during cooking. Sprinkle with extra herbs and serve with lime cheeks.
