Pin boning

Use a large knife to cut down the length of fillet to remove the bloodline that runs down the middle, near the spine.

Run fingers against grain to feel and find small bones (usually at thickest part of fillet).

Using tweezers, grab each pin bone and pull up firmly, and slightly sideways, to remove.
