TOASTED SESAME, SWEET POTATO & BEAN COLESLAW

SERVES 6 PREP 10 MINS COOK 20 MINS

200g orange sweet potato, cut into matchstick­s

2 tsp sesame oil

¼ cup mayonnaise

1 tbsp warm water 100g green beans, halved lengthwise

350g Chinese cabbage (wombok), shredded

2 tbsp snipped chives

2 tbsp toasted sesame seeds

1 Preheat oven to 180°C. Place sweet potato on an oven tray. Drizzle with sesame oil. Bake 15 mins until browned and tender. Cool. Whisk mayonnaise and water in a jug.

2 Cook beans in a saucepan of boiling water 3 mins until just tender. Drain. Refresh under cold water. Combine sweet potato, beans, cabbage and chives in a bowl. Add dressing, tossing to combine.

3 Serve coleslaw topped with toasted sesame seeds.
