PARMESAN CRISPS
MAKES 12 PREP + COOK 20 MINS + COOLING
1 cup finely grated parmesan 2 tsp wholemeal plain flour ¼ tsp freshly ground black pepper 1 tsp finely chopped rosemary leaves Preheat oven to 180°C. Line 2 oven trays with baking paper. Combine parmesan, flour, black pepper and rosemary in a medium bowl. Place 12 level tablespoons of mixture onto trays, 5cm apart, flattening to 8cm rounds.
2 Bake 6 mins until pale golden. Working quickly, lift using a palette knife, then drape over a rolling pin to cool.
SERVE WITH
Caesar salad as a crunchy alternative to the usual fresh parmesan shavings.
