CHICKEN & CHERRY SALAD

1 barbecue chicken, skin removed, meat shredded 60g mixed salad leaves 3 cups cooked quinoa 250g pitted cherries 2 green-skinned apples, cored, thinly sliced ¾ cup roasted hazelnuts, peeled, chopped 4 long green onions, finely sliced

DRESSING

¼ cup olive oil ¼ cup lemon juice 1 tbsp Dijon mustard 1 tbsp honey

1 In a large bowl, toss all of the ingredient­s. 2 DRESSING In a jug, whisk all of the ingredient­s. Season. 3 Toss salad with dressing.
