2 cups almonds ½ cup desiccated coconut ½ cup coconut oil 6 tbsp raw cacao powder 2 tsp vanilla bean extract 12 medjool dates, pitted ½ cup cashews, roughly chopped ½ cup pistachios, roughly chopped ½ cup cranberries 1 Line a baking tray with baking paper. Blitz almonds, coconut, oil, cacao, vanilla and dates in a food processor. 2 Stir cashews, pistachios and cranberries into mixture.
3 Press into tray. Refrigerate and allow to set 40 mins before serving.
