CART O’ TREATS

SERVES 8 PREP 30 MINS

125g unsalted butter, softened 1½ cups icing sugar red gel food colouring 450g Madeira cake 5 ice-cream wafers 12 round red and white lollies trimmed licorice strap, mini gingerbread men cookies, lollies to decorate red with food colouring.

Trim Madeira cake into thirds and neaten edges. Spread icing around top and sides of each cake and arrange on a serving board.

Halve three wafers lengthways and press onto tops of cart, trimming to fit. Trim remaining wafers to form edges of border.

Fill cart with lollies. Use red and white lollies to form wheels, licorice strap to form tracks and gingerbread men to decorate the sides.

In a bowl, beat butter until pale. Gradually add icing sugar, beating until well combined. Tint
