PASSIONFRUIT PISCO PUNCH MAKES 2 LITRES PREP + COOK 15 MINS + REFRIGERATION
Stir ¾ cup caster sugar and ¾ cup water in a small saucepan over medium heat until sugar dissolves. Bring to boil. Pour into a heatproof jug and refrigerate until cold. Meanwhile, press ¾ cup fresh passionfruit pulp through a sieve over a jug. Add 1 tsp of the seeds to the passionfruit juice. Discard remaining seeds. Just before serving, combine 1 cup of the sugar syrup, passionfruit juice mixture, 2 tbsp lemon juice, 1½ cups Pisco (or white rum) and 3 cups ice in a large jug. Stir in 3 cups soda water. Serve with lemon wedges.
GREEN TEA, CUCUMBER & LYCHEE COCKTAIL MAKES 2 LITRES PREP + COOK 15 MINS + REFRIGERATION
Stir 11/ cups caster sugar, sugar 8 green tea bags and 1.25 litres water in a medium 3 saucepan over high heat. Bring to boil. Remove from heat and discard tea bags. Refrigerate tea until completely cooled. Half-fill a large serving jug with crushed ice. Add 560g canned lychees in syrup (including syrup), 1 cup chilled vodka, 1 thinly sliced Lebanese cucumber and ¼ cup thinly sliced fresh mint leaves. Stir in chilled tea syrup until combined.
RHUBARB & ELDERFLOWER MOJITO MAKES 2 LITRES PREP + COOK 15 MINS
Split 1 vanilla bean lengthways, scrape seeds into a saucepan. Add 300g chopped rhubarb, 2 cups caster sugar and 2 cups water. Bring to boil over high heat. Reduce heat, simmer, uncovered, for 5 mins. Cool. Strain rhubarb mixture over a medium jug. Reserve syrup. Keep rhubarb for another use. Place 8 coarsely chopped limes and 1 cup loosely packed fresh mint leaves in a large jug. Crush with a muddling stick or rolling pin. Add reserved syrup, 1 cup white rum, 1/ cup elderflower cordial and 1 cup ice cubes. 3 Top with 1.25 litres soda water.
CUBA LIBRE MAKES 2 LITRES PREP 10 MINS
Fill eight highball glasses with ice cubes. Divide 2 thinly sliced limes, 1 cup gold or white rum and then top with 1 cup chilled lemonade and 1 cup chilled soda water. Stir gently before serving.
