EASTER EGG TRUFFLES
MAKES 10 PREP 30 MINS + 1 HOUR CHILLING
◆ 137g packet Oreo
◆ 75g unsalted butter, melted, cooled
◆ 125g bag caramello eggs
◆ 200g dark chocolate, chopped
◆ chopped pistachios, salt flakes, to decorate
1 In food processor, crush Oreos until fine crumbs. Transfer to bowl and stir in butter. Using about 3 tsp of mixture at a time (you will need 11 portions) and slightly damp hands, press mixture around outside of Easter egg to coat. Arrange on a tray lined with baking paper. Freeze 30 mins.
2 Melt dark chocolate in microwave-safe bowl. Using 2 forks to hold truffles, dip in chocolate, then transfer back to lined tray. Sprinkle with combined pistachio and salt flakes, while chocolate is still wet. Chill 1 hour until firm.
