CHOC CHUNK BANANA BREAD

◆ 11/ cups

self-raising flour

◆ ¼ cup cocoa

◆ 1 tsp ground cinnamon

◆ 4 mashed ripe bananas

◆ 2/ cup brown sugar

◆ 125g melted butter

◆ 2 eggs

◆ ¼ cup milk

◆ 1 tsp vanilla extract

◆ 100g dark chocolate, chopped

◆ white choc curls, to serve

CREAM CHEESE FROSTING

◆ 250g cream cheese, chopped, at room temperatur­e

◆ 3/ cup icing sugar

Preheat oven to 180ºc. Lightly grease and line a 11 x 21 cm loaf pan. Sift flour, cocoa and cinnamon together into a large bowl. Stir in brown sugar. Make a well in centre.

2 In a large jug, combine bananas, butter, eggs, milk and vanilla. Pour into flour mixture. Fold together lightly to combine. Lightly mix chocolate through. Pour into pan, smoothing top.

3 Bake 55-60 mins until cooked when tested (cover with foil if over-browning). Cool in pan 5 mins before turning onto wire rack to cool completely.

4 CREAM CHEESE FROSTING In a bowl, using electric mixer, beat cream cheese and icing sugar together until combined. Spread over top of banana bread. Serve with white choc curls.
