CHORIZO CARBONARA
SERVES 4 PREP 5 MINS COOK 15 MINS
◆ 375g fettuccine
◆ 2 eggs
◆ 3 garlic cloves, thinly sliced
◆ 2 chorizo sausages, finely chopped
◆ ½ cup finely grated parmesan, plus extra to serve
1 In a large saucepan of boiling salted water, cook fettuccine to packet instructions. Drain. Return to pan. Cover to keep warm.
2 Meanwhile, heat large oiled frying pan on medium. Saute chorizo 6-8 mins until golden. Add garlic. Cook, stirring, 2 mins.
3 In jug, lightly whisk eggs and parmesan together. Season. Remove frying pan from heat.
4 Add chorizo and egg mixture to warm fettucine. Toss on low until pasta is completely coated and sauce thickens. Serve straight away, scattered with extra parmesan and parsley, if liked.
