Q How do I master a traditiona­l British scone?

A Aim for a soft, sticky dough that just holds its shape out of the bowl. Use a sharp metal cutter to cut rounds and press cutter straight down (not twisting), then arrange, barely touching, in a lightly greased shallow cake pan. If you prefer crusty scones, place 1 cm apart on an oven tray.
