LAKSA FRIED RICE

SERVES 4 PREP 10 MINS COOK 5 MINS

◆ 1 bunch fresh coriander

◆ 175g Chinese sausages, sliced

◆ ½ cup laksa paste

◆ 250g packet fresh stir-fry vegetables

◆ 450g packet microwave jasmine rice

1 Remove leaves from the coriander and set aside. Finely chop roots and stems.

2 Preheat a wok or large frying pan on high. Add sausage and stir-fry 2-3 mins until golden.

3 Stir in laksa paste and chopped coriander. Stir-fry 1 min.

4 Add vegetables. Stir-fry 1 min to heat through. Mix in rice. Stir-fry 1-2 mins until well combined and heated through.

5 Serve topped with coriander leaves. Sprinkle with crispy noodles, if liked.
