MEDITERRANEAN QUICHE
MAKES 8 PREP 10 MINS COOK 10 MINS
◆ 4 eggs
◆ ½ cup cream
◆ 4 sheets frozen puff pastry, defrosted
◆ 180g semi-sundried tomatoes, drained, sliced
◆ 180g jar, marinated artichokes, drained, sliced
◆ 12 pitted kalamata olives, coarsely sliced
◆ 60g baby spinach, shredded
◆ ¼ cup cheese
1 Preheat pie maker. Whisk together eggs and cream in jug. Season. Toss tomatoes, capsicum and olives together in bowl.
2 Stamp out 8 x 11cm rounds of pastry, from 2 sheets of pastry, and 8 x 10cm from remaining. Place larger rounds into pie maker. Place ¼ of spinach into base. Top with ½ tomato mixture.
3 Pour 2 tbsp of egg mixture over filling. Sprinkle with cheese. Close pie maker and cook 5-6 mins or until golden and filling set. Remove from pie maker. Repeat to make 8. Serve with remaining spinach leaves.
