ROAST PORK WITH APPLE SAUCE
SERVES 6 PREP + COOK 1 HOUR 25 MINS
◆ 1.6kg pork rack (6 cutlets), rind scored
◆ 1 tbsp olive oil
◆ 1 tbsp coarse cooking salt ◆ 2 tsp fennel seeds, crushed APPLE SAUCE
◆ 3 large Granny Smith apples, peeled, cored, sliced thickly ◆ 1 tsp caster sugar
◆ ¼ tsp ground cinnamon
1 Preheat oven to 250°C.
2 Pat pork dry with paper towel. Place pork on a rack in a roasting pan. Rub rind with oil, then the combined salt and crushed fennel seeds. 3 Roast pork 40 mins or until the skin blisters. Reduce oven to 180°C. Roast a further 35 mins or until pork is just cooked. To test if pork is cooked, insert a meat thermometer into a middle section of the meat – it should register 62°C. Alternatively, insert a metal skewer – the juices should run clear.
4 APPLE SAUCE Meanwhile, place apples and ½ cup water in a medium saucepan over medium heat. Simmer 15 mins or until apple is soft. Stir in sugar and cinnamon.
5 Serve pork with apple sauce.
