PROSCIUTTO-WRAPPED TURKEY BREAST
SERVES 6 PREP + COOK 1 HOUR 40 MINS
◆ 6 slices prosciutto ◆ 1.5kg turkey breast with wing bone left in
◆ 4 medium pears, quartered lengthways
◆ 2 tbsp brown sugar
◆ 2 tbsp extra-virgin olive oil ◆ 4 bay leaves
◆ 1 cup verjuice
◆ 40g butter, chopped
1 Preheat oven to 200°C.
2 Wrap prosciutto around turkey, secure with kitchen string at 2.5cm intervals. Season. Place turkey in a large oiled baking dish, cover tightly with foil. Roast, covered, 40 mins.
3 Meanwhile, combine pear, sugar and half the oil in a medium bowl.
4 Brush turkey all over with the remaining oil. Increase oven to 220°C. Add pears and bay leaves to baking dish around turkey. Roast, uncovered, a further 35 mins or until turkey is cooked through and pears are browned and tender. Remove turkey and pears from dish. Cover with foil, stand 10 mins.
5 Add verjuice to baking dish, cook, stirring, over high heat
1 min or until thickened slightly. Remove baking dish from heat. Add butter, stirring until combined. Pour sauce into jug.
6 Serve with pears, accompany with sauce.
