PORK & CHILLI STEW

◆ 1 tbsp olive oil
◆ 750g diced pork
◆ 1 red onion, chopped finely
◆ 2 garlic cloves, chopped finely
◆ 1 red capsicum, chopped coarsely
◆ 500g baby new potatoes, quartered
◆ 35g sachet chilli spice mix
◆ 400g can corn kernels, drained, rinsed
◆ 800g can diced tomatoes
◆ 2 limes
◆ ½ cup sour cream
◆ 2 long green chillies, sliced thinly
◆ ¼ cup chopped coriander
1 Heat oil in a large frying pan over medium-high heat. Cook pork, turning, until browned all over. Transfer to a 4.5-litre slow cooker.
2 Place onion, garlic, capsicum, potato, spice mix, corn and tomatoes in cooker. Cook, covered, on Low, about 8 hours. 3 Cut cheeks from limes. Divide pork mixture among serving bowls. Top with sour cream, chilli and coriander. Accompany with lime cheeks.
