Curry in a flash!

Enjoy authentic Indian at home with celeb chef Anjum Anand’s quick fish korma

SERVES 4 Heat

1 tsp vegetable oil in a non-stick frying pan.

Add the whole spices from The Spice Tailor Delicate Korma Curry packet and cook 15 secs. Add 10 thin strips of fresh ginger and cook until starting to colour. Dice 1/ small

3 red capsicum into small cubes, add to pan and cook 3-4 mins. Add both packet sauces and 1 tbsp tomato puree and bring to the boil. Add 275g firm white fish chunks and a handful of baby spinach and simmer 4-5 mins until the fish is cooked through. Add a splash of hot water, if necessary, so that the curry is lightly creamy but not gloopy. g Check and adjust seasoning, s adding black pepper p and fresh coriander. Serve S hot with naan or rice.
