GRILLED ZUCCHINI & CAPSICUM WITH MACADAMIA
SERVES 8 PREP + COOK 30 MINS
◆ 2 red capsicum
◆ 3 zucchini, sliced thinly lengthways
◆ ¼ cup olive oil
◆ ¼ cup macadamia nuts,toasted, chopped roughly
◆ ½ bunch chives, snipped
DRESSING
◆ ¼ cup extra-virgin olive oil
◆ 2 tbsp red wine vinegar
◆ 2 tsp wholegrain mustard
◆ 1 tsp maple syrup
◆ 1 garlic clove, crushed
1 Heat a chargrill plate or barbecue grill on high. Brush capsicum and zucchini with oil.
2 Chargrill capsicum 4-5 mins each side until skin blisters and blackens. Place in a plastic bag and set aside 5 mins.
3 Chargrill zucchini slices 1-2 mins each side until grill marks appear. Place in a bowl.
4 Remove skins, seeds and membrane from capsicum. Slice and toss with zucchini, macadamia nuts and chives.
5 DRESSING In a jug, whisk all ingredients together. Season to taste. Just before serving, toss dressing through salad.
