DOUBLE CHEESE POTATO GRATIN

◆ 300ml pouring cream

◆ 1 cup milk

◆ 50g butter

◆ ¼ tsp ground nutmeg

◆ 2 garlic cloves, bruised

◆ 3 sprigs fresh thyme, plus extra sprigs to serve

◆ 1.5kg desiree potatoes

◆ 1 cup coarsely grated cheddar

◆ ½ cup coarsely grated parmesan

1 Heat cream, milk, butter, nutmeg, garlic and thyme in a medium saucepan until just below boiling point. Remove pan from heat, stand 15 mins. Discard garlic and thyme.

2 Meanwhile, preheat oven to 200°C. Grease a 2-litre (8-cup) shallow ovenproof dish.

3 Use a mandoline or V-slicer to slice potatoes thinly. Layer potato slices and cheddar in dish, pour cream mixture over top. Cover dish with greased foil.

4 Bake gratin, covered, 45 mins. Remove foil, sprinkle gratin with parmesan. Bake, uncovered, 20 mins or until potato is tender and browned. Stand 10 mins before serving topped with extra thyme sprigs.
