MINCE MINCECE PIE BROWNIESBR­OWNIBROWNI­ES

◆ 150g butter, chopped

◆ 300g dark chocolate, chopped

◆ 300g packet mince pies

◆ 1½ cups brown sugar

◆ ¾ cup plain flour

◆ ¼ cup self-raising flour

◆ 3 eggs, beaten lightly

◆ ½ cup sour cream

◆ 2 tbsp brandy

◆ 180g white chocolate, chopped

◆ icing sugar, to dust

1 Preheat oven to 160°C. Lightly grease a 20cm x 30cm slice pan, line base and sides with baking paper, extending paper 2cm over sides.

2 Stir butter and 200g of the dark chocolate in a large saucepan over low heat until melted. Remove from heat, cool slightly. 3 Using a small serrated knife, remove tops of mince pies. Set tops aside. Roughly chop base and filling. Freeze 10 mins.

4 Stir sugar, then combined sifted flours into melted chocolate mixture. Stir in combined eggs, sour cream and brandy. Gently stir through three-quarters of the remaining combined chopped chocolates and chopped mince pie mixture.

5 Pour mixture into pan and level top. Press mince pie tops into top of brownie and sprinkle with remaining chocolate. Bake 30-35 mins or until a skewer inserted comes out with little beads of mixture on it. Allow to cool in pan before cutting into pieces. Serve dusted with icing sugar. Decorate with white chocolate trees and stars, if liked.
