HAM SALA SALAD WITH CRUNCHY SLAW

SERVES 8 PREP + COOK 35 MINS

◆ ¼ cup orange juice

◆ 2 tbsps extra-virgin olive oil

◆ 2 tsp Dijon mustard

◆ 500g leg ham, sliced thickly

◆ 300g bag coleslaw

◆ 110g macadamia halves, toasted, chopped coarsely

◆ ½ cup fresh mint leaves

◆ 4 long green onions, sliced

DRESSING

◆ 2 tbsp extra-virgin olive oil

◆ 1 tbsp marmalade

◆ 1 tbsp white wine vinegar 1 In a small bowl, combine juice, oil and mustard. Brush over each side of ham slices.

2 Preheat chargrill or barbecue grill on high. Cook ham, in 2 batches, 1-2 minutes each side until lightly charred and warmed through. Tear ham into smaller pieces if large.

3 In a serving bowl, combine slaw, macadamias, mint leaves and onion.

4 DRESSING In a jug, whisk all ingredient­s together. Season to taste.

5 Arrange ham over salad. When ready to serve, drizzle dressing over.
