BEEF BRISKET
Dry rub, then roast at a low temperature to ensure the sinew is tender and the meat is soft. After roasting, remove from pan, pour the cooking juices into a saucepan to be used for gravy. Place the brisket back in the oven, turn up the temperature to 200°C and allow the layer of fat to crisp. Remove from oven, rest and slice.
