TURKEY BOLOGNESE PIZZAS
MAKES 6 PREP 15 MINS + COOLING COOK 45 MINS
◆ 2 tbsp olive oil
◆ 1 onion, chopped finely
◆ 1 carrot, peeled, diced finely
◆ 1 celery stalk, diced finely
◆ 2 garlic cloves, crushed
◆ 500g turkey mince
◆ 500g jar tomato pasta sauce
◆ ½ cup water
◆ 6 small pizza bases
◆ 1 cup grated pizza cheese
◆ basil and rocket leaves, to serve
1 Preheat oven to 200°C.
2 In a large frying pan, heat oil on medium. Saute onion, carrot and celery 4-5 mins until onion is tender. Add garlic, cook a further 1 min.
3 Increase heat to high. Add mince, brown 6-8 mins,
breaking up lumps with a wooden spoon.
4 Stir in pasta sauce and water. Bring to the boil. Reduce heat to medium, simmer 8-10 mins until sauce thickens. Allow mixture to cool.
5 Place pizza bases on oven trays. Spread ² / cup 3 bolognese mixture over each base. Sprinkle evenly with cheese.
6 Bake 15-20 mins until cheese is golden and bubbling. Scatter with basil and rocket and serve in wedges. Accompany with a salad, if liked.
This bolognese sauce is delicious tossed through hot pasta and sprinkled with freshly grated parmesan.
