WARM LEBANESE BREAD
SERVES 6 PREP + COOK 45 MINS + STANDING
◆ 1 ½ cups plain flour
◆ 1 tsp salt
◆ 1 tsp dried yeast
◆ ¾ cup warm water
◆ ¼ cup olive oil
◆ 2 ½ tsp za’atar
◆ 300g marinated chilli labne
◆ mixed bean salad, to serve (see tip)
1 Sift flour and salt into a large bowl, stir in yeast. Add the water and 1 tbsp oil, stir until the mixture forms a sticky dough. Turn dough onto a floured surface, knead until smooth and dough loses its stickiness. Place in an oiled large bowl. Cover and stand in a warm place 1 hour or until dough doubles in size.
2 Preheat oven to 240°C. Oil a large oven tray.
3 Punch down dough with your fist, spread and stretch dough out on oven tray into a 26cm x 34cm rectangle. Sprinkle with za’atar.
4 Bake bread 8 mins or until crisp. Drizzle with remaining oil.
5 Serve bread topped with bean salad and marinated chilli labne.
