BASIC WHITE BREAD

MAKES 18 SLICES PREP + COOK 1 HOUR + STANDING

◆ 3 tsp (10g) dried yeast

23 / cup warm water

◆ 2 tsp caster sugar

◆ 2½ cups plain flour

◆ 1 tsp salt

◆ 30g butter, melted

◆ ½ cup warm milk

1 Whisk yeast, water and sugar in a small bowl until yeast dissolves. Cover, stand in a warm place 10 mins or until mixture is frothy.

2 Sift flour and salt into a large bowl, stir in butter, milk and yeast mixture. Knead dough on a floured surface 10 mins or until dough is smooth and elastic. Place dough into an oiled large bowl, cover, stand in a warm place about 40 mins or until the dough doubles in size.

3 Preheat oven to 200°C.

Oil a 10cm deep, 9cm x 22cm bread tin.

4 Knead dough on a floured surface until smooth. Divide dough in half. Roll each half into a ball, place side-by-side in bread tin. Dust with a little extra flour. Cover, stand in a warm place 20 mins or until dough has risen.

5 Bake bread 30 mins or until it sounds hollow when tapped. Turn bread onto a wire rack to cool.
