CHICKEN NOODLE SOUP

SERVES 4 PREP 10 MINS COOK 15 MINS

◆ 1.5 litres chicken stock

◆ 2cm piece of ginger, peeled, grated

◆ 2 garlic cloves, crushed

◆ 2 x 250g chicken breast fillets

◆ 200g dried rice stick noodles

◆ 1 bunch choy sum, chopped

◆ fried shallots, sliced chilli, to serve

1 In a large saucepan, combine stock, ginger and garlic. Bring to a simmer on medium heat. Add chicken, then reduce heat to low. Simmer 12-14 mins until chicken is just cooked through.

2 Meanwhile, soak noodles in boiling water following packet instructio­ns.

3 Remove chicken from stock and shred using two forks.

4 Add choy sum to soup, simmer 1 min. Stir through the drained noodles and shredded chicken.

5 Divide soup among four serving bowls. Serve topped with shallots and sliced chilli.
