PARMA MEATBALLS

SERVES 4 PREP 20 MINS COOK 15 MINS

◆ 500g beef mince

◆ ½ cup fresh breadcrumb­s

◆ 1 onion, grated

◆ ½ cup parsley leaves, chopped, plus extra to serve

◆ 1 egg, beaten lightly

◆ ¼ cup grated parmesan

◆ 2 garlic cloves, crushed

◆ 1 tbsp olive oil

◆ 1 cup tomato passata

◆ 1 cup grated mozzarella

◆ steamed green beans, to serve

1 Preheat grill to high.

2 In a large bowl, combine mince, breadcrumb­s, onion, parsley, egg, parmesan and garlic. Season, mix well.

3 Roll heaped tablespoon­s of mixture into rough balls. Arrange on tray, chill until required.

4 In a large ovenproof frying pan, heat oil on high. Cook meatballs 4-5 mins, turning, until evenly browned.

5 Pour over sauce, bring to a simmer. Cook 1-2 mins, stirring.

6 Sprinkle cheese over meatball mixture. Place under hot grill on middle shelf, grill 4-5 mins until cheese is melted and golden. Top with extra parsley, serve with beans.
