Masterchef contestant Amina Elshafei shares her super-tasty tomato and anchovy sauce SERVES 5-6

Add ¼ cup olive oil to 1 a pan on medium heat, add 4 thinly sliced garlic cloves. Stir for 1 min. Add 8 chopped anchovy fillets, 1 tbsp oil from anchovy jar and 1 / tsp dried chili flakes. 3 Cook a further 2 mins, stirring regularly. Add 2 x 400g cans crushed tomatoes, stir and bring to the boil. Reduce heat to a simmer, cover and cook for 30 mins. Cook 500g penne 2 pasta in a saucepan of boiling, salted water following packet instructio­ns. Stir ¼ cup coarsely 3 chopped basil leaves through sauce and continue to simmer uncovered. When pasta is al dente, use a slotted spoon to transfer it into the sauce with ¼ cup of the pasta water. Stir well to coat pasta and thicken sauce. Season with salt and pepper, drizzle with a little extra-virgin olive oil and garnish with fresh basil leaves to serve.
