CHUNKY BEEF, BEAN & BROCCOLI STEW
SERVES 4 PREP 15 MINS COOK 1 HOUR 10 MINS
• 1 tbsp vegetable or olive oil
• 500g beef chuck steak, chopped
• 1 onion, finely chopped
• 2 bacon rashers, rind removed, coarsely chopped • 1 garlic clove, crushed
• 1 large beef stock cube
• 400g can diced tomatoes
• ½ tsp dried oregano
• 500g broccoli, cut into florets
• 400g can butter beans, rinsed • basil leaves, freshly grated parmesan, to serve
1 In a large heavy-based saucepan, heat oil on high. Add beef and cook, stirring, 2 mins or until browned all over. Remove from pan.
2 Reduce heat to moderate. Add onion and bacon and cook, stirring, 2 mins until lightly browned. Add garlic and cook, stirring, 1 min or until fragrant. Return beef to pan with crumbled stock cube, 1 litre (4 cups) water, tomato and oregano. Bring to the boil on high. Reduce heat and simmer, covered, 1 hour until beef is tender.
3 Add broccoli and beans to pan. Simmer 4 mins or until broccoli is tender. Season with salt and pepper.
4 Serve sprinkled with basil and parmesan.
