SAN CHOY BAU
SERVES 4 PREP 5 MINS COOK 10 MINS
• reserved char siu meatloaf • 100g dried rice vermicelli noodles • 1 tbsp vegetable oil
• 1 carrot, peeled, julienned
• 4 green onions, finely sliced
• 1 tbsp soy sauce
• 2 tsp oyster sauce
• ½ cup coriander leaves
• 4 large iceberg lettuce leaves
1 Break meatloaf into coarse crumbs. Soak noodles. Drain and chop.
2 In a wok, heat oil on high. Stir-fry carrot and onion 1-2 mins. Toss with meatloaf and sauces 1-2 mins. Add noodles and coriander. Serve in lettuce.
