PORK LOAVES WITH GARLIC MASH
SERVES 4 PREP 15 MINS COOK 25 MINS
• 500g pork mince
• ¼ cup dried breadcrumbs • ¼ cup grated tasty cheese • 2 green onions, chopped
• ½ cup relish, tomato, plus extra to serve • steamed green beans, thyme leaves, to serve GARLIC MASH
• 750g potatoes, peeled, chunks • 25g butter
• 2 green onions, chopped • 2 garlic cloves, thinly sliced • ½ cup milk
1 Preheat oven to 180°C. Lightly grease 4 recesses of a Texas muffin pan.
2 In a large bowl, combine mince, breadcrumbs, cheese and onion. Season and mix well.
3 Press mixture evenly between into recesses to fill. Spoon over relish. Bake 20-25 mins until cooked and golden. Rest in pan 2 mins.
4 GARLIC MASH In a saucepan of boiling, salted water, cook potatoes 12-15 mins until tender. Drain. Set aside. In same saucepan, melt butter on high. Saute onion and garlic 1-2 mins until tender. Return potatoes to pan with milk. Mash well, season to taste and stir 1-2 mins on low.
5 Remove loaves from pan, retaining pan juices to drizzle if liked. Serve sprinkled with thyme. Accompany with mash, beans and extra relish.
TOP TIP Any leftover pork loaves make a great sandwich filling with relish, cheese and sliced tomato.
