SWEET CHILLI POACHED EGG SOBA NODDLES
SERVES 4 PREP 10 MINS COOK 10 MINS
• 270g packet soba buckwheat noodles
• 1 head broccoli, cut into florets
• 250g sugar snaps, trimmed
• 1 tbsp white vinegar
• 4 eggs
• ¼ cup sweet chilli sauce
• 2 tbsp peanut oil
• 2 tbsp rice vinegar
• 2 tbsp fish sauce
• 4 green onions, thinly sliced
1 Cook noodles in a saucepan of boiling salted water 1 min. Add broccoli, cook 2 mins, then sugar snaps 30 secs. Drain and set aside.
2 Bring a deep frying pan of water to the boil on medium. Add vinegar. Reduce heat to low. Break eggs into simmering water. Poach 2-3 mins, splashing with a little hot water as they cook. Turn heat off.
3 Heat a wok or large frying pan on high. Add sauce, oil, rice vinegar and fish sauce, stirring.
4 Toss noodles with vegies through sauce 2-3 mins until well coated and hot. Spoon into serving bowls. Top each with a drained poached egg, a drizzle of remaining sauce and scattered with green onion.
1 Preheat oven to 200°C. Lightly grease a 20cm x 30cm casserole dish.
2 In a medium bowl, combine chicken, ricotta, spinach and eggs. Season to taste.
3 Place lasagne sheets on clean surface. Spoon one-eighth chicken mixture on one side of each. Roll up tightly. Arrange rolls dish. Pour over cream and sprinkle with cheese. Bake, covered with foil, 20 mins. Remove foil. Bake a further
10 mins until golden brown.
4 Serve cannelloni with carrots and rocket.
TIP Wrap any leftover lasagne sheets well in plastic wrap and place in a freezer bag. Freeze for up to a month. Dress rocket leaves with a drizzle of lemon juice and olive oil.
1 In a bowl, combine oil and seasoning. Add steaks, turning to coat. Cover and marinate at least 15 mins.
2 BEETROOT SAUCE In a bowl, combine all ingredients. Season to taste.
3 Heat a frying pan on medium. Fry steaks 2-3 mins each side for medium. Transfer to a plate. Rest, covered with foil, 5 mins. Slice when ready to serve.
4 Top base of each roll with lettuce, tomato, sliced lamb, beetroot sauce and onion. Finish with roll top. Serve with fries and extra beetroot sauce.
