TOFU HONEY NOODLES
SERVES 4 PREP 10 MINS COOK 10 MINS
• 2 bunches broccolini, cut in half
• 250g snow peas, sliced thickly
• 270g dried udon noodles
• 2 x 200g packet honey soy tofu, cut into 3cm pieces
• 2 tbsp white sesame seeds, toasted
1 In a large frying pan over high heat, add 2 tbsp olive oil. Cook broccolini pieces 2 mins or until slightly charred. Set aside and repeat with snow peas.
2 Bring a large pot of water to the boil. Cook noodles 2-3 mins or until al dente. Drain noodles and coat with a little oil to loosen.
3 Add 1 tbsp olive oil to frying pan. Heat tofu pieces 2 mins or until heated through. Add noodles and vegetables. Stir to combine.
4 Sprinkle with toasted sesame seeds to serve.
