FILO BEEF PIE PREP
SERVES 4 10 MINS COOK 50 MINS
• 2 bunches broccolini, cut into 3cm pieces
• 500g beef mince
• 1 x 43g pkt cottage pie recipe base
• 6 sheets filo pastry
• 2 tsp cumin seeds
1 Preheat oven to 180°C. Grease a medium rectangle baking dish.
2 In large frying pan over high heat, add 2 tbsp olive oil. Cook broccolini 2 mins, stirring occasionally. Remove from pan. Set aside.
3 In same frying pan over medium heat, add 2 tbsp olive oil and cook beef mince 3 mins or until lightly browned. Increase heat to high, add recipe base and ¾ cup water. Cook 3 mins or until thick and saucy. Return broccolini to the pan and stir to combine. Transfer mixture to prepared pie dish.
4 Brush 1 sheet of filo with a little olive oil. Layer with another sheet of filo and brush with a little more oil. Gently scrunch filo and arrange on top of the pie mixture. Repeat, in layers of two, with remaining filo.
5 Sprinkle pastry with cumin seeds. Bake 40 mins or until pastry is crispy.
