Filo with finesse

1 Filo pastry dries out very quickly, so use a slightly damp clean tea towel to cover pastry as you work with it.

2 Brushing each layer of filo with either olive oil or melted butter gives a crispy result after baking.

3 Filo can be layered flat before baking. It can also be scrunched for easy height on top of a pie.
