Celebrity chef Justine Schofield shares ways to minimise m waste and put excess cheese to good use

THE CHEESIEST TOASTIE

When I have a handful of leftover Fromager d’affinois (double cream cheese), I roughly chop it into little pieces. I butter two thick-cut slices of white sourdough and on the other side add Dijon mustard and the cheese. I sandwich it together and toast in a pan over a medium heat until golden brown and the creamy cheese is super oozy.

MAC & CHEESE

The more cheese, the better! To jazz up your mac and cheese, add some chipotle in adobo sauce to give the cheesy sauce a lovely smoky flavour.

CAULIFLOWE­R BAKE

Add chopped or grated leftover cheese to the hot white sauce and allow it to melt in. Pour over blanched cauliflowe­r florets and add extra cheese to the top before baking.

SALAD

Add leftover cheese croutons to serve with a salad.
