CHEESEBOARD LEFTOVERS – REIMAGINED!
Celebrity chef Justine Schofield shares ways to minimise m waste and put excess cheese to good use
THE CHEESIEST TOASTIE
When I have a handful of leftover Fromager d’affinois (double cream cheese), I roughly chop it into little pieces. I butter two thick-cut slices of white sourdough and on the other side add Dijon mustard and the cheese. I sandwich it together and toast in a pan over a medium heat until golden brown and the creamy cheese is super oozy.
MAC & CHEESE
The more cheese, the better! To jazz up your mac and cheese, add some chipotle in adobo sauce to give the cheesy sauce a lovely smoky flavour.
CAULIFLOWER BAKE
Add chopped or grated leftover cheese to the hot white sauce and allow it to melt in. Pour over blanched cauliflower florets and add extra cheese to the top before baking.
SALAD
Add leftover cheese croutons to serve with a salad.
