ONE-PAN GREEK CHICKEN & HALOUMI
SERVES 4 PREP 10 MINS COOK 15 MINS
• 2 tbsp olive oil, plus 1 tbsp extra • 500g chicken thighs, 2cm slices • ¹⁄³ cup white wine •
400g can cherry tomatoes • 1 zucchini, sliced into ribbons • 1 clove garlic, thinly sliced • 250g haloumi, 1cm slices • 2 Lebanese bread rounds, cut into wedges, lightly toasted, lemon cheeks, oregano leaves, to serve
1 Preheat oven grill on high.
2 In a large ovenproof frying pan, heat oil on high. Brown chicken 3-4 mins. Add wine, bring to boil. Reduce heat to medium and simmer 2-3 mins until reduced by half.
3 Add tomatoes, zucchini and garlic. Simmer 3 mins. Top with haloumi. Drizzle with oil. Season.
4 Grill 4-5 mins until haloumi is lightly golden and soft. Serve with bread, lemon and oregano.
