SPICED PORK PATTIES WITH PEAR SLAW
SERVES 4 PREP 20 MINS COOK 15 MINS
• 1 onion, finely diced
• 2 garlic cloves, crushed
• 1 tsp ground cumin
• 400g can cannellini beans, rinsed, drained
• 500g pork mince
• 1 cup parsley leaves
• 1 tsp honey
• ¼ red cabbage, finely shredded • 1 pear, cored, julienned
• 1 carrot, shredded
TAHINI DRESSING
• ¼ cup apple cider vinegar
• 2 tbsp water
• 1 tbsp tahini
• 2 tsp honey
• ½ tsp ground turmeric 1 Heat a non-stick frying pan on high. Spray with oil. Saute onion and garlic 2-3 mins until tender.
Stir in cumin and cook 1 min, stirring. Set aside to cool.
2 In a large bowl, roughly mash beans with a fork. Add onion mixture, pork mince and ¼ cup parsley. Season and mix well.
3 Shape into 8 even-sized patties. Heat same pan on high. Spray with oil and cook patties 4-5 mins, each side, until cooked through. Drizzle over honey.
4 TAHINI DRESSING In a small jug, whisk all ingredients together. Season.
5 In a large salad bowl, toss cabbage, pear, carrot and remaining parsley together. Serve patties with slaw, drizzled with dressing. Accompany with drizzled tahini dressing.
