BEEF, MUSHROOM & SNOW PEA STIR-FRY
SERVES 4 PREP 10 MINS COOK 20 MINS
2 tbsp vegetable oil
500g beef fillet, thinly sliced 400g mixed mushrooms (see Tip) 4 green onions, white part 4cm lengths, green tips sliced 3cm fresh ginger, peeled, finely grated
2 garlic cloves, crushed
1 tsp sesame oil
¹⁄³ cup beef stock
200g snow peas, trimmed
2 tbsp oyster sauce
1 tbsp soy sauce steamed rice, 1 long red chilli, thinly sliced, to serve
1 In a wok or large frying pan, heat half the oil on high. Stir-fry beef in two batches, 1-2 mins each, until well browned. Remove.
2 In same wok, heat rest of oil on high. Add firm mushrooms (shiitake), onions, ginger, garlic and sesame oil. Stir-fry 2-3 mins, until just tender.
3 Add stock. Bing to simmer. Cook 1-2 mins, until reduced by half. Add rest of mushrooms, snow peas. Stir-fry 1 min until mushrooms are tender.
4 Return beef to pan with oyster and soy sauces. Stir-fry 1-2 mins to heat through. Serve on a bed of rice and sprinkle chilli over.
TIP We used 200g shiitake, 100g oyster and 100g enoki mushrooms.
