FRIDAY NIGHT FISH BURGERS

SERVES 4 PREP 10 MINS COOK 15 MINS

• 350g frozen tempura fish nuggets

• ¹/³ cup tartar sauce

• 1 tsp wasabi paste

• 4 bread rolls, split, toasted

• butter, for spreading

• ¼ iceberg lettuce, leaves torn

• 1 Lebanese cucumber, sliced

• ½ red onion, finely sliced

• lemon wedges, French fries, to serve

1 Preheat oven to 180°C.

2 Bake fish pieces on a lined oven tray, 10-15 mins following packet directions.

3 In a small bowl, stir sauce and wasabi together until smooth.

4 Spread rolls with butter. Fill with lettuce, cucumber, fish pieces, dolloped sauce and onions. Serve with lemon wedges and French fries.

TO VARY Use any frozen ready-crumbed or battered fish pieces you can find in your local supermarke­t.

TIP To make a kid-friendly seafood sauce, mix ¹/³ cup mayonnaise with 1 tbsp tomato or sweet chilli sauce.
