TUNA PATTIES WITH OLIVE SALAD

SERVES 4 PREP 20 MINS + CHILLING COOK 15 MINS

• 750g potatoes, chopped into 2cm cubes • ¼ cup plain flour

• 1 egg, lightly beaten

• 1 red onion, ½ chopped, ½ sliced • 425g can tuna in springwate­r, drained • 150g green beans, trimmed

• 1 cup kalamata olives, drained

• 1 yellow capsicum, seeded, chopped • ¼ cup parsley leaves

DRESSING

• ¼ cup olive oil

• 2 tbsp red-wine vinegar • 1 tsp Dijon mustard

1 Place potatoes in a large microwave bowl. Cover with boiling water and plastic wrap. Microwave on High 8-10 mins until tender. 2 Transfer two-thirds potatoes to a large bowl and mash with a fork. Stir in flour, egg and chopped onion. Flake tuna over and mix through. Shape into 8 even patties and chill until required. 3 In a bowl, combine remaining potatoes with beans, olives, capsicum, sliced onion and parsley.

4 DRESSING In a jug, whisk all ingredient­s together and season.

5 In a large frying pan, heat oil on medium. Cook patties 2-3 mins, each side, until golden. Drain on paper towel. Serve with dressed olive salad.
