THAI-STYLE PORK ROLLS
SERVES 4 PREP 15 MINS COOK 10 MINS
• 4 thin pork sausages • 1 tbsp red or green Thai curry paste
• 1 tbsp peanut oil
• 2 tbsp fish sauce
• 2 tbsp lime juice
• 1 tbsp brown sugar • 1 cucumber, thinly sliced lengthways
• 1 carrot, shredded
• 4 long rolls, halved •
1/ cup whole-egg

mayonnaise •
¼ cup coriander leaves • 2 green onions, cut into 12cm lengths •
2 tbsp toasted peanuts, chopped •
1 long red chilli, thinly sliced (optional)
1 Split sausages in half lengthways, three-quarters of way through. Brush cut-side with combined curry paste and oil.
2 Heat a chargrill pan or barbecue on medium. Grill 3-4 mins, each side, until cooked through.
3 In a large bowl, stir sauce, juice and sugar together until sugar dissolves. Add cucumber and carrot. Toss well.
4 Spread rolls with mayonnaise. Fill with salad and sausages. Scatter with coriander, onion, peanuts and chilli. Drizzle with remaining vegetable marinade.
